Christmas Tree Fruit Pizza

Fruit Pizza shaped like a Christmas Tree? Start with a delicious sugar cookie crust, then top with a white chocolate frosting, then load up with fruits, and top with a glaze. Who wouldn’t love a delicious treat that is also loaded with yummy fruit.

As a mom of 4 young children I always like to make holidays extra special by creating festive desserts! Fruit pizza has always been a family favorite. So when Eggland’s Best eggs reached out to me and wanted me to create a holiday recipe I knew my family would be thrilled with a delicious fruit pizza!

I have always loved Eggland’s Best eggs because they have 6x more Vitamin D compared to other eggs. As well as 25% less saturated fat and more than double the amount of Omega 3 and Vitamin B12! They are 10 times richer in Vitamin E! As a mother these things have always been very important to me. With young developing and learning minds companies that focus highly on this are very important to me. 

 

During the holiday season as you prepare food for your loved ones it is important to use quality ingredients not only to enhance your recipes but to also nourish your loved ones!

 

Christmas Tree Fruit Pizza

prep time: 60 minutes 

cook time: 25 minutes

servings: 12-15 people 

 

Sugar Cookie
1 cup butter
1 cup shortening
1 cup powdered sugar
1 cup sugar
1 teaspoon baking soda
2 Eggland’s Best eggs
2 teaspoons vanilla
4 1/2 cups flour
1 teaspoon cream of tarter

Mix all ingredients and chill. Roll out nice and thick. Transfer dough to a cookie sheet (I used a 21 in × 15 in ) Then using a knife cut the dough into a giant Christmas tree. Bake at 350 degrees for 8-10 minutes (or until the shine is off of the cookies)Then set aside and let cool. 

Frosting:
10 ounce pkg vanilla milk chips
1/4 cup heavy cream
8 ounce cream cheese

Melt chips into cream. Beat in cream cheese. Then once the Christmas tree cookie has cooled spread on the frosting.

Glaze:
2 cups pineapple juice
2 Tablespoons corn starch
1/2 teaspoon lemon juice
1 cup sugar (taste it to see if it sweet enough for you and add more sugar if you want to)

In saucepan add all ingredients. Stir over geat until it comes to a boil and starts to thicken and then set aside to cool.

kiwi

strawberries

raspberries

blackberries

blueberries

pomegranate seeds

pineapple (cut into a star)

How to assemble a Christmas Tree fruit pizza

Start with the cookie and then frost. Then arrange the fruit on top of the frosting and then top with the glaze.
