And hereâs my favorite little trick: roast the tomatoes first. Just 25â30 minutes in a hot oven helps caramelize their natural sugars and gives the finished sauce an incredible depth of flavor.

How to Make Slow Cooker Fresh Tomato Sauce
1. Prepare the tomatoes
Core the tomatoes and cut them into quarters.
There is no need to peel them. The skins soften during cooking and can be blended into the sauce later.
2. Roast the tomatoes
Place the tomatoes on a baking sheet.
Drizzle with olive oil and sprinkle with some of the salt, pepper, and oregano.
Roast at 425°F for 25â30 minutes.
3. Add everything to the slow cooker
Transfer the roasted tomatoes to your slow cooker.
Add the diced onion, garlic, remaining olive oil, tomato paste, herbs, salt, pepper, bay leaves, and Parmesan rind if using.
Give everything a good stir.
4. Let the slow cooker work its magic
Cover and cook:
LOW: 8â10 hours
HIGH: 5â6 hours
The longer, slower cooking time gives the tomatoes time to break down and develop a deep, rich flavor.
5. Blend
Remove the bay leaves and Parmesan rind.
Use an immersion blender to blend the sauce until smooth.
If you prefer a chunky tomato sauce, simply blend it less.
6. Thicken if needed
If your sauce is thinner than youâd like, remove the lid and cook on HIGH for another 30â60 minutes, stirring occasionally.
This is especially helpful when using very juicy garden tomatoes.
7. Finish with fresh basil
Stir in fresh chopped basil and taste.
Adjust the salt, pepper, and seasonings as needed.
For an extra silky sauce, stir in 1â2 tablespoons of butter right at the end.
