My Most Popular Weeknight Dinner Recipes: 2021 Edition!

It is almost time to get back in the routine of searching for the best weeknight dinner. But before we get ahead of ourselves – Happy New Year, friends! I am so grateful for another year of sharing my favorite recipes with all of you. While 2021 was a wild year, nothing makes me happier than sharing a good meal with family and friends and these recipes helped me do just that. End of year roundups are some of my favorite blogs to write because it gives me a little insight into what your favorite recipes are. Looking at this list, I can’t say I’m too surprised because a few of these recipes are in the top 10 every single year! I don’t know that I’m ready for school and activities to be back! But when they are, I will have these weeknight dinner ideas handy!

Crockpot Spinach Tortellini

Wow – this needs to be on my next meal plan! I love this recipe because making this in the crockpot enhances the flavor so much. Nothing better than a “set it and forget it” dinner on a weeknight – and this fits the bill perfectly. The sausage adds just enough kick, but it isn’t too spicy.

Baby Back Ribs in the Crockpot

My son’s favorite meal! I feel like ribs don’t usually make the cut for weeknight dinner because grilling them takes time. If you throw them in the crockpot, they are juicy, delicious, and easy as ever. Add it to the menu!

Sheet Pan Sausage and Vegetables

If you want to add a healthy meal to your weeknight menu, sheet pan dinners can’t be beat. I love this specific recipe, but I use whatever leftover veggies I have on hand. My best recommendation is to add brussel sprouts because they are very hearty and filling.

Crockpot Buffalo Chicken Dip

Okay, this isn’t quite a weeknight dinner staple, but this was SO popular on my blog this year that I had to include it. You could definitely use this as an appetizer, or maybe add the chicken to a quesadilla! A dinner full of appetizers sound really fun…adding that to my “list” for this year!

German Pancakes

When you don’t know what to make, it’s breakfast for dinner! This is a family recipe that we make frequently because we have a lot of people to feed! This is the easiest way to make pancakes for a crowd. Top with berries and powdered sugar and you have a gourmet weeknight dinner.

Rubio’s Fish Tacos

We love fish tacos and these copycat fish tacos from Rubio’s are SO yummy. What takes them from good to great is the secret sauce which I’ve mastered and included in this recipe! Definitely check this one out.

Sweet and Sour Chicken

This would be perfect for New Year’s Eve! This recipe makes a ton and it reheats beautifully for lunch the next day.

Crockpot Bone-In Turkey Breast

A weeknight turkey dinner – don’t be crazy (unless you’re making it in the crockpot!). After the holidays, you may be burnt out of turkey dinners, but in a few months when you’re stuck in a recipe rut, turkey is a great way to switch things up from chicken. The best part about having turkey for dinner is the amazing turkey sandwiches you can have for lunch the next day!
