Here is an easy breakfast burritos recipe to make. Making burritos can be pretty easy and they are great to make ahead and save to use through out the week. I have found a way to master the breakfast potatoes that are in the burrito! Pop in the microwave. Then have 2 pans going at one time. One pan has oil in it and is crisping up the potatoes and the other one is cooking up the scrambled eggs for the burritos.

You can use russet, red, white, or really whatever potatoes you have! If I am making mashed potatoes that week I will take out a couple and set aside so that I can make these for my son. If not I order 2 potatoes usually every other week so I have them on hand to make these! Here is a breakfast burrito recipe

How to Make Breakfast Burritos

Ingredients

  • tortillas
  • potatoes
  • frozen diced onions
  • eggs
  • Trader Joes 21 Salute Seasoning (or your favorite seasoning)
  • a little milk or cream
  • seasoning salt
  • vegetable oil
  • and whatever toppings you like for your burrito

Instructions

How to Make Breakfast Burritos

  1. Pierce the potatoes with a fork a few times and then pop in the microwave on the baked potato setting and cook for ALMOST the whole time. You want to remove from when they are soft but not too soft.
  2. Then take the potatoes out of the microwave and let cool for 1 minute.
  3. How to make scrambled eggs. Take the eggs and break them into a bowl. Then add some milk or cream or half and half to the eggs and whisk them together. Add your favorite seasoning. (If I am doing 8 eggs I will do 1/4 cup cream and 1 1/2 tsp seasoning)
  4. Then take the potatoes and cut them into small squares. I leave the skins on to crisp up. Then pour some oil into one pan. Just a drizzle on the entire bottom. Then pop the potatoes in and give them a little fry on all the edges.  I also like to add some frozen onions and cook them together. This is totally optional though. Season them. Add more oil if you need to fry them more. The potatoes like to soak up the oil.
  5. In the other pan cook up the scrambled eggs. Top with cheese and you can add meat, veggies, etc.
  6. Assemble the burritos by laying down a tortilla and adding the potatoes, eggs, and toppings. Wrap up and serve.
  7. Make ahead breakfast burritos. If you have leftovers wrap them in siran wrap and keep them in the fridge. Then microwave for 30 seconds at a time to heat back up! So here is how you do breakfast burritos in the freezer or fridge and for breakfast burritos to make ahead.

Step-By-Step with Photos

  1. Cook the potatoes.

2. Prepare the other ingredients and cook potatoes until crispy.

3. Next cook the eggs to a scramble.

4. Lay a tortilla out flat and add the egg first.

5. Then add the potatoes.

6. Add the rest of the ingredients to your liking!

7. Roll into a tight burrito folding the insides first.

8. Repeat this process and enjoy!
