Breakfast Potatoes with Bacon, Peppers, and Onions in a Skillet

Favorite breakfast side dish is loaded breakfast potatoes in skillet. I absolutely love them. My moms friend shared this breakfast potato recipe and I could not wait to give it a try.

Breakfast potatoes in a skillet loaded with veggies, bacon, and some butter and herbs! You can even top it with a fried egg to make it a whole breakfast dish and not just a side dish. Trust me when I say this breakfast will have you full for the rest of the day. It is one of my new favorite to make in the mornings and it is so easy to throw these ingredients into a skillet and cook for a few minutes while stirring everything around! Try this recipe out the next morning you have free and get your protein in!

Loaded Breakfast Potatoes in Skillet

Loaded Breakfast Potatoes in Skillet

Ingredients

  • 6 slices bacon, cut into 1 inch pieces
  • 1 T butter
  • 4 small-medium russet potatoes, diced
  • 2 bell peppers, seeded and finely chopped
  • 1 onion, finely chopped
  • 2 T minced garlic
  • salt and pepper
  • seasoning salt
  • 1/4 cup parmesan cheese 
  • parsley, garnish

Instructions

  1. In a skillet fry up the bacon until crisp and then remove from pan and set aside. (leave the bacon grease in the pan)
  2. Then add the butter to the bacon grease followed by the potatoes, bell peppers, and onion. Cook staring occasionally. Until potatoes are tender but crispy on the outside. Add the minced garlic and cook for another minute or two. Then season with salt and pepper and seasoning salt.
  3. Then remove from heat and top with bacon, parmesan cheese and parsley.
  4. Serve and enjoy!

  1. Gather all of your ingredients (you can even add extra!) and start by frying up the bacon until crisp and then remove from pan and set aside. The trick is to leave the bacon grease in the pan after cooking the bacon!
  2. Then add the butter to the bacon grease followed by the potatoes, bell peppers, and onion. Cook staring occasionally until potatoes are tender but crispy on the outside.

3. Add the minced garlic and cook for another minute or two. Then season with salt and pepper and seasoning salt.

4. Then remove from heat and top with bacon, parmesan cheese and parsley.

5. Serve and enjoy your delicious breakfast!
