Breakfast Potatoes with Bacon, Peppers, and Onions

Favorite breakfast side dish is breakfast potatoes. I absolutely love them. My moms friend shared this breakfast potato recipe and I could not wait to give it a try. 

Breakfast potatoes loaded with veggies, bacon, and some butter and herbs! You can even top it with a fried egg to make it a whole breakfast dish and not just a side dish.

Breakfast Potatoes with Bacon, Peppers, and Onions

ingredients

6 slices bacon, cut into 1 inch pieces

1 T butter

4 small-medium russet potatoes, diced

2 bell peppers, seeded and finely chopped

1 onion, finely chopped

2 T minced garlic

salt and pepper

seasoning salt

1/4 cup parmesan cheese 

parsley, garnish

Instructions

In a skillet fry up the bacon until crisp and then remove from pan and set aside. (leave the bacon grease in the pan)

Then add the butter to the bacon grease followed by the potatoes, bell peppers, and onion. Cook staring occasionally. Until potatoes are tender but crispy on the outside. Add the minced garlic and cook for another minute or two. Then season with salt and pepper and seasoning salt.

Then remove from heat and top with bacon, parmesan cheese and parsley.
