The other day I went to a local restaurant and they had homemade oatmeal cream pies. I got one to go and ate it while I did my carpools that afternoon. It was amazing and reminded me of my childhood! Little Debbie’s oatmeal cream pies are AMAZING and this is the perfect copycat recipe. It is easy to make and turns out absolutely delicious!

Oatmeal Cream Pies (Copycat Little Debbie Recipe)

Ingredients

  • 1 cup butter
  • 3/4 cup dark brown sugar
  • 1/2 cup sugar
  • 1 T molasses
  • 1 t vanilla
  • 2 eggs
  • 1 1/2 cups flour
  • 1/2 t salt
  • 1 t baking soda
  • 1/8 t cinnamon
  • 1/8 t nutmeg
  • 1 1/2 cups quick oats
  • 2 t very hot water
  • 1/4 t salt
  • 7 oz marshmallow cream
  • 1/2 cup shortening
  • 1/3 cup powdered sugar
  • 1/2 t vanilla

Ingredients 

  • 1 cup butter
  • 3/4 cup dark brown sugar
  • 1/2 cup sugar
  • 1 T molasses
  • 1 t vanilla
  • 2 eggs
  • 1 1/2 cups flour
  • 1/2 t salt
  • 1 t baking soda
  • 1/8 t cinnamon
  • 1/8 t nutmeg
  • 1 1/2 cups quick oats  (if you use other kinds of oats these will run together, use quick oats)

Cream Filling Ingredients

  • 2 t very hot water
  • 1/4 t salt
  • 7 oz marshmallow cream
  • 1/2 cup shortening
  • 1/3 cup powdered sugar
  • 1/2 t vanilla

Instructions

  1. In a bowl add together the butter and sugars and mix. 
  2. Then add the molasses, vanilla and eggs and mix.
  3. Add the flour, salt, baking soda, cinnamon and nutmeg and then mix.
  4. Gently mix in the oats. Drop 1 Tablespoon of the mixture onto a cookie sheet (if you dough is soft or sticky you can put them in the fridge at the point for 10 minutes and then bake)  and then bake at 350 degrees for 9-11 minutes. 
  5. While the cookies are baking make the cream filling. In a bowl dissolve the salt into the hot water. Then set aside to cool.
  6. Combine marshmallow cream, shortening, powdered sugar, and vanilla in a bowl and mix together until fluffy. Then add the cooled water and mix. 
  7. Then when the cookies are cooled spread it on one side and then top with the other side!
