Coconut and oatmeal is one of my favorite cookie combos! These oatmeal coconut cookies are also moist, soft and super delicious.
How to Make Yummy Oatmeal Coconut Cookies:
- Add the sugars and shortening in a bowl and mix together.
- Next add the eggs, vanilla, and almonds extract.
- Add the flour, baking powder, baking soda and salt and mix together.
- Then lightly mix in the oats and coconut.
- Drop cookie dough balls onto a greased cookie sheet.
- Bake at 375 degrees F for about 12 minutes.

- 2 cups brown sugar
- 2 cups sugar
- 2 cups shortening
- 4 eggs
- 1 teaspoon vanilla

- 4 cups old fashion rolled oats
- 2 cups coconut
