Salmon Tacos with pineapple salsa

My family absolutely loves seafood. Especially salmon! Ever since my four children were babies, I have fed them fish. Such a healthy alternative to other proteins and also helps introduce my children to other varieties of foods. 

One of my favorite things about salmon is how it always leaves me satisfied when finished and not full and bloated. So when I saw this Sea Cuisine Honey Chipotle Salmon at my local Kroger grocery store  I grabbed it and knew I needed to give it a try! Sea Cuisine has such a variety of options, but I particularly love that this salmon is responsibly sourced and has omega 3 fatty acids. 

Salmon Tacos with Pineapple Salsa

Salmon Tacos with Pineapple Salsa

Ingredients

Salmon Tacos

  • 2 packages Sea Cuisine Honey Chipotle Salmon Filets  
  • 12 corn tortillas (cooked) or romaine lettuce to create lettuce wraps
  • Lime (sliced)

Pineapple Salsa

  • 1/2 pineapple (diced) 
  • 1 red bell pepper (de-seeded and diced)
  • 1 yellow or orange bell pepper (de-seeded and diced)
  • 1 jalapeno (de-seeded and diced)
  • 1/2 medium purple onion (diced)
  • 2 mangos (diced)
  • 1 bunch of cilantro (chopped)
  • juice of 2 limes
  • salt to taste

Instructions

  1. Head over to your neighborhood Kroger grocery store and grab 2 packages of the frozen Honey Chipotle salmon filets. Cook according to the directions on the back of the packaging that works best for you. 
  2. While the salmon is cooking, prepare the pineapple salsa.
  3. Once the salmon is ready, remove from the oven and then gently grab a fork and flake off pieces of salmon. This salmon will come off tender and juicy! Perfect for these tacos! 
  4. Fill the cooked tortilla with some pieces of Honey Chipotle Salmon and then top with the pineapple salsa.
  5. Serve with lime slices to squeeze on the tacos when ready to eat
One of my favorite local Mexican restaurants has some amazing salmon tacos and since it was taco Tuesday I decided to turn my Honey Chipotle Salmon filets into salmon tacos! Best part of it all was that the salmon was already seasoned and full of flavor so I didn’t need to work about the seasoning part because that was already taken care of. 

I finished them off with a delicious pineapple salsa which made these salmon tacos over the top delicious! 

Salmon Tacos 

2 packages Sea Cuisine Honey Chipotle Salmon Filets 

12 corn tortillas (cooked) or romaine lettuce to create lettuce wraps

Lime (sliced)

Instructions

Head over to your neighborhood Kroger grocery store and grab 2 packages of the frozen Honey Chipotle salmon filets. Cook according to the directions on the back of the packaging that works best for you. 

While the salmon is cooking, prepare the pineapple salsa.

Once the salmon is ready, remove from the oven and then gently grab a fork and flake off pieces of salmon. This salmon will come off tender and juicy! Perfect for these tacos!

Pineapple Salsa

1/2 pineapple (diced) 

1 red bell pepper (de-seeded and diced)

1 yellow or orange bell pepper (de-seeded and diced)

1 jalapeno (de-seeded and diced)

1/2 medium purple onion (diced)

2 mangos (diced)

1 bunch of cilantro (chopped)

juice of 2 limes

salt to taste

 

Instructions 

Combine all ingredients and then serve on top of the salmon tacos!
