Peaches and Cream Pie – No Baking Necessary!

Peaches and Cream! Is there a better combo than this!? How about adding the word pie at the end? Yup I think that will do the trick!

It is peach season and guess what the first thing I decided to whip up was…you guessed it! This no bake peaches and cream pie. It’s quickly become a favorite around here!

Peaches and Cream Pie

This week I have partnered up with Kroger Co. and Prima® Wawona Peaches to bring you a yummy new recipe featuring the delicious yellow peaches from Prima®!

Peach season is a favorite season in our home! Peaches are one of my husband’s favorite fruits and we take full advantage when peaches are extra delicious! Yellow peaches from Prima® are grown in California and they have a delicious farm fresh flavor. 

These peaches are perfect for snacking morning, noon and night but also so delicious in recipes! I love grilling peaches and serving them with ice cream, adding them to smoothies, topping my salads with them (like I did here in this grilled peach salad), or making anything from a yummy crisp or cobbler or pie with them!

Peaches are so fun to recipe develop with! As you can tell by my favorite peach recipes, they come in all forms! And ultimately my husband’s favorite way to eat peaches is chopped up, sprinkled with sugar, with cream poured over them! Since peaches and cream are his favorite, I knew I wanted to create a peaches and cream-inspired recipe! 

So here is how you make a no-bake peaches and cream pie! 

 

No Bake Peaches and Cream

Ingredients

peach filling

3 yellow peaches from Prima®, found at your local Kroger Store

1/4 cup brown sugar

2 cinnamon sticks

1 Tablespoon water

1 teaspoon corn starch

crust 

2 packages graham crackers or 2 1/2 cups graham cracker crumbs

1/2 cup butter, melted

cream filling

3.5 oz Kroger instant vanilla pudding mix

1 cup milk

8 ounces cream cheese, softened at room temperature

whipped cream

1 1/2 cups Kroger heavy whipping cream

1/3 cup powdered sugar

1 teaspoon vanilla

topping, optional 

1 fresh yellow peach, thinly sliced  

Instructions

Take a cutting board and thinly slice your fresh yellow peaches! Then in a small sauce pan, add 3 of the sliced peaches. Then sprinkle over the brown sugar and add the cinnamon sticks. Cook over low to medium heat for about 5 minutes. 

While the Prima® yellow peaches are cooking, whisk together the water and cornstarch to create a paste and then add it to the peaches and let them continue to cook until the 5 minutes is up. The peaches should be soft and the cornstarch mixture should help create a glaze over the peaches. Set the peaches aside to cool.

In a blender or food processor, add the graham crackers and blend them. Then grab a pie pan and pour in the graham cracker crumbs. Evenly pour the melted butter over the graham cracker and mix together to create a crumb crust. 

Press the crust mixture into the bottom of the pie pan. Cover the bottom and the sides of the pan. Then set aside.

In a bowl, add the vanilla pudding and milk and mix it all together using a hand mixer. Then add the softened cream cheese and mix together to create the cream filling. 

Then in a separate bowl or stand mixer, add the whipping cream, powdered sugar, and vanilla and whip until stiff peaks are formed and you have a whipping cream. Fold half of the mixture into the cream filling and set the other half aside to top the pie. 

Now it is time to assemble. First take the crust and the peach filling. Remove the cinnamon sticks and pour the peach filling evenly on top of the pie crust. Then top it with the cream pie filling. Then the extra whipped cream. Finally top the pie with the last slices of the fresh yellow peaches!

Store in the fridge for 2-3 hours and then slice and serve.
