Brown Butter Bacon Tortellini Recipe

Brown butter bacon tortellini is such an amazing and unique dinner idea! I love recipes that take a simple dish and elevate it so that it’s a entree that EVERYONE will remember! Brown butter…delicious, Bacon…delicious, Tortellini…delicious. Do I need to say more!?

How to make the best bacon tortellini

  1. Bring a pot of water to boil. Add a tablespoon of olive oil. Then cook the tortellini according to package.
  2. Then place the spinach in the strainer. And when the pasta is done cooking drain it directly on top of the spinach! This will cook the spinach with the pasta water.
  3. While the pasta is cooking cook the bacon. Then crumble.
  4. Then in a skillet add the butter. Cook it over low heat for about 5 minutes until the butter begins to brown. Swirl the pan while the butter is browning.
  5. Then add in the diced onion and minced garlic. Cook for about 2 minutes. Then add the crumbled bacon. Followed by the diced tomatoes. Stir together until the browned butter covers everything.
  6. Then pour in the cooked spinach and tortellini. Stir to combine. Garnish with chopped parsley and shaved parmesan if you would like and then serve!

Ingredients

  • 20 oz package of cheese tortellini
  • water
  • 1 T olive oil
  • 2 large handfuls of spinach
  • 1 lb bacon
  • 1/3 cup butter
  • 1 onion, diced
  • 1 T minced garlic
  • 2 tomatoes, diced

Instructions

  1. I made this tonight and I loved it!!! I added 1/2c of whole milk and a 1/2 tsp of boullion to the sauce. I will be making this again and again!
