Balsamic Chicken and Sheet Pan Veggies

This balsamic chicken recipe is perfect for feeding a family and is well balanced with the sheet pan veggies. For all my bacon lovers, that is my secret ingredient!

Sheet pan dinners are a perfectly easy dinner to make for the entire family! The balsamic chicken with veggies has got to be one of my favorite sheet pan dinners and everyone always LOVES the way it comes out. It is a great way for me to get my kids to eat some vegetables without them really noticing. The bacon definitely helps with that! Try out this delicious recipe and let me know what you think!

Sheet Pan Balsamic Chicken with Bacon and Brussel Sprouts

Ingredients

  • 4 large chicken breasts, cut into 1 inch cubes
  • 4 slices of bacon, chopped
  • 1 lb Brussel sprouts, cut in half
  • 1/2 cup pecans, chopped
  • 2 gala apples, sliced
  • salt and pepper
  • olive oil
  • 1/2 cup balsamic vinegar

Instructions

  1. Preheat the oven to 425 degrees.
  2. Then grab a cookie sheet, spray with cooking spray, then arrange the chicken in a single layer on the baking sheet.

3. Next, arrange the bacon in between the chicken

4. Then the Brussel sprouts.

5. Sprinkle the pecans all over the cookie sheet and arrange the apple slices on top of everything.

6. Season very well with salt and pepper. Drizzle olive oil over everything and toss. Then finish with drizzling the balsamic vinegar all over. The 1/2 cup will give it a light balsamic flavor.

7. If you love balsamic you can toss the chicken in it before placing it on the cookie sheet. Drizzle another 1/2 cup like it states in the directions. Then bake for 30 minutes or until chicken is done.
