Avocado Frittata Recipe

A frittata is the perfect brunch recipe! They can be served hot or you can make them ahead to make an easier breakfast or brunch.

For those that do not know what a frittata is I promise it will become your new favorite dish! It is an Italian meal that is made from fried eggs and it turns out absolutely delicious! In this recipe, I added avocados as my special ingredient and let me tell you I will not make it any other way. The combination of ingredients in this recipe made for the perfect flavor and I could not be more happy with how this turned out. My family LOVES this recipe and I promise yours will too! How to Make a Frittata

Frittata Recipe

Frittata Recipe
Prep Time 20 minutes
Cook Time 20 minutes
Total Time 40 minutes

Ingredients

  • 1/2 cup mushrooms, chopped
  • 1/2 cup green onions, sliced
  • 2 cups spinach
  • 1 bell pepper, chopped
  • 2 T olive oil
  • 2 T butter
  • 6 eggs, beaten
  • 1/8 cup half and half
  • 1/2 cup feta cheese
  • salt and pepper
  • avocado, chopped

Instructions

  1. Preheat oven to 350 degrees. In a cast iron or oven proof skillet add the mushrooms, green onions, spinach and bell pepper. Then add the olive oil and butter and sauté until veggies are tender. 
  2. In a bowl add the eggs, half and half and salt and pepper. Whisk together and then pour over the cooked veggies. Cook over medium heat until the bottom of the eggs begins to set up. Then sprinkle the feat cheese on top. 
  3. Then take the skillet and put it in the oven. Bake for 15 minutes and then add the avocado on top and then place back in the oven and cook for 5 more minutes. 
  4. Then take out of the oven and cover with foil. Set aside for 5 minutes and then ingredients will continue to cook while out of the oven covered. Then serve!
