Everyone likes to put different ingredients in their tacos which is why taco salads can be so versatile. Make it your own and experiment with different flavors! This recipe is perfect for a mid-week dinner meal because all you have to do it throw your chicken and salsa in the crockpot to let sit and cook all day. By dinner time it will be ready to enjoy and add your favorite topics to!

Easy Dinner Idea
This easy chicken recipe is started in the crockpot by tossing in only 2 ingredients, chicken and salsa. Cooking these for a few hours prior to dinnertime will give you the perfect base for the chicken taco salad.
This recipe can be made healthier by not adding the tortilla strips or serving it just on a bed of lettuce. You can also do pork or beef instead of chicken if you prefer!
Tips for making the chicken
This one is super easy! Throw chicken breasts and salsa in the crockpot and cook! It’s as easy as that! Don’t worry about cutting it into small bits or shredding it until after it has cooked. It will be way easier this way!
Quicker way to make the chicken
If you don’t have time to wait for the crockpot you can always grill the chicken and dice it up! Or you can buy pre-cooked chicken from the grocery store and call it a day!
How to assemble a Taco Salad
- Grab the shell
- Spread refried beans on the bottom
- Sprinkle with cheese
- Top with the salsa chicken
- Add the lettuce
- Sprinkle with toppings
- Drizzle dressing
You do not have to do this in this exact order, however this is the way I have found most success!
Chicken Taco Salad
- Taco salad shells
- refried beans, heated up
- shredded cheese
- lettuce, thinly shredded or sliced
- tomatoes, diced
- jalapeños, de-seeded and diced
- sour cream
- other toppings
- Salsa Chicken Ingredients
- 3-4 Chicken Breasts
- 1 cup salsa
Place chicken and salsa in the crockpot on low for 6 hours or on high for 4 hours. When it is done shred the chicken the way you like it.
Salsa Ranch Dressing
- 1 cup mayonnaise
- 1/2 cup salsa
- 1/2 cup milk
- 3 Tablespoon Ranch Salad Dressing Mix
- 2 teaspoons cumin
Whisk all ingredients together. Then pour over the rest of the salad.
