Crispy Breakfast Potatoes

Crispy on the outside, soft in the center breakfast potatoes. Aren’t those kind of potatoes the best? This recipe will have you making breakfast potatoes even on weekdays and not just on special occasions!

Crispy Breakfast potatoes are perfect along side this breakfast casserole, avocado toast, biscuits and gravy or in these breakfast burritos. The test of a good breakfast place is their breakfast potatoes! Good potatoes can make or break a breakfast in my opinion. I have the perfect, easy, simple breakfast potato recipe that I have been dying to share with you all!

How to make breakfast potatoes

  1. I have a secret for you… you don’t have to spend lots of time prepping potatoes to make these.
  2. Grab some potatoes, poke a few holes in them, and pop them in the microwave under the “baked potato setting” right before the time is up, remove the potatoes and place them on a cutting board.
  3. Slice the potatoes into cubes, keep the skins on to create crispy skins
  4. Then in a skillet drizzle some oil and then fry up those cube potatoes
  5. Season the potatoes with season salt and pepper
  6. Fry up! Add more oil while you are cooking them if you need them to get more fried, sometimes the potatoes soak up the oil and you need to add more to get the crispy outsides
  7. Then serve!

How to make breakfast potatoes in the oven

You can do the same steps as above but then you can place them on a cookie sheet and roast them at 450 degrees F for about 20 minutes, keep an eye on the potatoes bc the size of the potatoes will determine how long it takes.

If they won’t crisp up you can turn the oven to broil!

How to store your breakfast potatoes

I like to either store my leftover breakfast potatoes in a ziplock bag (wait until they cool before fully zipping them) or place in an airtight container and store in the fridge.

Can you freeze the leftover potatoes

I personally haven’t had great success doing them by themselves. But if you place them in breakfast burritos and then freeze the burritos that works better!
