Buttermilk pancakes with buttermilk syrup are a family staple at my house!

Happy National Pancake Day! My 3 year old is all about having pancakes for breakfast and asks almost every single day for me to make them! He manages to sweet talk me into making his cute little self them at least once a week. I have tried adding chocolate chips or blueberries in the batter and that is not up his alley! He likes just regular pancakes with syrup only. The rest of us usually pile ours high with whatever fruit we have on hand. Caramelizing a little peaches on top is a favorite of mine during peach season with a dollop of whipped cream. Here is our families go-to pancakes and syrup recipe!

The key to the crispy edges on the pancakes are using oil to make your pancakes instead of using butter or cooking spray. The oil will create that edge for you! It will be a game changer! Just try it!

Buttermilk Pancakes with Buttermilk Syrup

Ingredients

  • 2 eggs
  • oil
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 1/2 cups buttermilk
  • 1/4 cup butter, melted
  • 2 Tablespoons sugar

Instructions

    1. Grab a large bowl and put in the eggs.
    2. Then grab an electric hand mixer and beat for 15 seconds.
    3. Add the remaining ingredients (except the oil) and mix together.
    4. Then grab a skillet and brush on some oil then grab an ice cream scoop and make your pancakes.
    5. Serve with buttermilk syrup and enjoy!

Notes

Buttermilk Syrup Recipe:

  • 1/2 cup butter
  • 3/4 cup sugar
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda

Instructions:

  1. Combine butter, sugar, and buttermilk over medium heat in a medium to large saucepan.
  2. When it just starts to boil, remove off heat and add baking soda and vanilla.
  3. Stir; it will foam up. Serve hot. Can be refrigerated for up to 2 weeks.
  4. And then to reheat put in saucepan over medium heat until warm.
