Cashew Chicken Recipe

Chinese food is one of my families favorite and this cashew chicken is definitely at the top of the list! This chicken is AMAZING and is filled with so many different flavors. How to Make Cashew Chicken

CASHEW CHICKEN

CASHEW CHICKEN
Prep Time 20 minutes
Cook Time 10 minutes
Total Time 30 minutes

Ingredients

  • 1 lb. chicken (boneless and skinless), cut into pieces
  • 1 Tsp. soy sauce
  • 1 tsp. cornstarch
  • 3 Tbsp. oil
  • ½ c. salted cashews
  • 1 medium bell pepper, cut into 1 inch squares
  • 1 medium onion, cut into wedges and separated into layers
  • 1 tsp. fresh ginger
  • 1 tsp. cornstarch
  • 1 tsp. rice vinegar
  • 1 Tbsp. broth
  • 1 Tbsp. soy sauce
  • Dash of hot pepper seasoning

Instructions

  1. Prepare the cooking sauce; set aside.
  2. Mix chicken, soy sauce, and cornstarch.
  3. In wok, add 2 tablespoons oil. Add cashews and stir-fry until browned (1 minute).
  4. Remove and add chicken and stir-fry until opaque (about 3 minutes).
  5. Remove and stir-fry peppers and onions until tender crisp (1 minute).
  6. Mix everything in wok. Add sauce. Stir until sauce thickens.
  7. Serve immediately over hot rice.
