Oatmeal Coconut Cookies

Coconut and oatmeal is one of my favorite cookie combos! These oatmeal coconut cookies are also moist, soft and super delicious.

How to Make Yummy Oatmeal Coconut Cookies:

  1. Add the sugars and shortening in a bowl and mix together. 
  2. Next add the eggs, vanilla, and almonds extract.
  3. Add the flour, baking powder, baking soda and salt and mix together.
  4. Then lightly mix in the oats and coconut.
  5. Drop cookie dough balls onto a greased cookie sheet.
  6. Bake at 375 degrees F for about 12 minutes.

Ingredients

  • 2 cups brown sugar
  • 2 cups sugar
  • 2 cups shortening
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 4 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoon baking soda
  • 2 teaspoon salt
  • 4 cups old fashion rolled oats
  • 2 cups coconut
