5 Ingredient Lemon Curd Salmon

Scared to try salmon? Afraid your kids won’t touch fish? This recipe is how you get someone to try fish for the first time

 

Somehow at dinnertime the neighbor kids tend to flock towards my house. Its like they can smell it coming down the street or something. But to tell you the truth, serving a house full of people food in my love language. It honestly brings me so much joy. I tell my friends that and they think I have lost my mind. But honestly seeing a table full of my kids and their friends eating almost brings me to tears!

The best thing about it is that I have turned some of the pickiest eaters into not so picky. When I text their moms “hey so and so is eating dinner over here” they always ask what I made that night. And then they proceed to text me in shock how they kid ate that!

My oldest son turns 10 this week. He has had a best friend since he was born. They have been in school class every year but one together and he lives around the corner. He barely eats for his mom but when he comes over I have gotten him to eat salmon, trout, and halibut! I wonder if he has any idea haha Recipes like this can get kids to try new foods. It is sweet and tasty!

My sister in law Holly lives a few houses down from me. Our kids play daily and are living their best lives! She knew I was making salmon this week and text me this family favorite recipe of hers. Her family eats it all the time and they love it! So I had to give it a try! And we absolutely loved it!

I also had another person on Instagram message me and say that they use orange marmalade for their salmon like this! I can’t wait to give that a try!

The BEST 5 ingredient Lemon Curd Salmon

Ingredients

  • 1 salmon filet
  • 1 (20 ounce) jar lemon curd
  • 1/4 cup butter, sliced
  • 2 lemons (1 sliced)
  • salt and pepper

Instructions:

Preheat oven to 350 degrees. Grab the salmon filet and place in a baking dish or a cookie sheet if you salmon is really long. Take the salt and pepper and season it. Then take the jar of lemon curd and spread on about half of it. Or until the salmon is covered. Then place the butter slices on top of the salmon. Then top with lemon slices. Take the other lemon and squeeze the juice on top of the lemon. Pop in the oven and bake for about 15-20 minutes. Or until the salmon is done. This time depends on how thick your salmon is. If you have a more flat salmon it will be closer to 15 if it is thick it will be closer to 20 minutes. So keep an eye on it. Once salmon is done. Remove from oven and spread more lemon curd on top!

  • 1/4 cup butter sliced
  • 2 lemons sliced
  • salt
  • pepper
