How to Pick the Best Cauliflower

Having healthy and fresh cauliflower is key to making this soup taste delicious and flavorful! You should try and find cauliflower that is about 6 to 8 inches in diameter and still has leaves around to bottom to protect it. The best time to buy cauliflower is in the cooler months between fall and spring. Make sure that the top is a nice white color and that the head is compact with no gaps. It is really easy to put apart and cut to make it into a recipe if you pick wisely!
